From California to Curry: Bert Mueller's Burrito Revolution in India

In the bustling streets of Bengaluru, amidst the aromatic chaos of local eateries, a Southern California twist is quietly carving its niche. Bert Mueller, a young man with a dream, ventured from the sunny shores of America to the vibrant chaos of India, armed with little more than an idea for a burrito joint.

Mueller’s journey began in 2010 during a study trip to Jaipur, where a culinary epiphany occurred. His American food, met with polite distaste by his host family, was overshadowed by the unexpected popularity of a classmate’s Mexican dishes. This spark ignited a vision: to bring the taste of California burritos to the Indian palate.

Just two years later, at the tender age of 22, Mueller returned to India, not as a student, but as an entrepreneur. In 2012, he opened the doors to the first California Burrito outlet in Bengaluru. The concept was simple yet unheard of in India. It offered fresh, fast-casual dining inspired by the vibrant flavours of Southern California.

A Recipe for Success

Initially, the challenge was formidable. Convincing a market accustomed to traditional Indian fare to embrace burritos required more than just marketing acumen. It needed an adaptation of flavours, respecting local tastes while retaining the essence of the original dish. Mueller's strategy paid off. By 2025, California Burrito had expanded to 103 outlets across India, its appeal cutting across cultural and culinary boundaries.

Last year alone, the chain reported revenues of Rs 196 crore. Such figures are testament to the success of Mueller's daring venture, which has not only thrived but also inspired a new genre of fast-casual dining in India. His story is a remarkable example of how cultural fusion in food can lead to massive business success.

Beyond Borders

Mueller's journey is more than just a business success story; it's a narrative of cultural exchange and adaptation. Through his burritos, he has created a bridge between the flavours of two continents, introducing many Indians to a cuisine they might never have tried.

As the demand for diverse and international foods grows in India, Mueller's foresight in recognising this potential market has paid dividends. Today, California Burrito is more than just a restaurant chain; it’s a culinary movement that has redefined dining experiences for many Indians.
